GeekFood #04: Chicken Pizza Ahoy!

pizza crust:
2 3/4 cup flour
1 pkg active dry yeast
1/4 tsp salt
1 cup warm water
2 Tbsp cooking oil
Combine 1 1/4 cups of the flour, the yeast, and the salt. Add the water and oil. Beat with an electric mixer on low speed for 30 seconds and the on high for 3 minutes. Stir in the remaining flour and add a little more if the dough is too sticky. devide the dough in half and let rise about 10 minutes. Roll out and bake at 500 for 7-10 minutes or just until the dough is crusty and a little brown.
White sauce:
1/2 stick butter
1/2 cup flour
2 cups milk
1/3 cup parmesan cheese
salt to taste
Melt butter on high in a saucepan and then slowly add flour and constantly whisk until combined. Add milk in and continually whisk until it becomes a thick sauce. You may need to add a little more milk if the sauce becomes too thick. Add parmesan and taste before adding any salt.
Toppings may include:
Diced Chicken
Sliced Tomatoes
mushrooms
Spinich leaves

GeekFood #03 – Football Fingers, and Weenie-Ladas

Two for the price of one! Well the Football Fingers are here to make up for now show last week.
Superbowl Chicken Fingers
Shortening for frying
4 chicken breast halves (serves 6 people)
2 cups self rising flour
1 tsp salt
1/2 tsp pepper
1 tsp Cajun seasoning (optional)
3 eggs
1/4 cup water
2 tsp Tabasco Sauce
Add shortening to skillet about 3/4inches deep when melted. Heat on medium high. Combine flower, salt, pepper, and Cajun seasoning in a shallow dish. Combine eggs, water, and Tabasco in a separate bowl. Mix well. Cut chicken into 1 inch wide strips. Dip chicken strips into egg mixture, then into flower mixture. Fry in hot shortening, one minute each side until golden brown.
Weenie-Ladas
1 package hot dogs (or polish sausages)
2 cans chili
8 flower or corn tortillas
1 cup shredded cheese
Preheat oven to 350F, fill each tortilla with one hot dog, and about one half cup chili. Roll and put into 9inch x13inch pan. Add chili to top as desired and cover with cheese. Bake at about 15 to 20 minutes.

1/2 Cup butter
2 cups peanut butter
1 1/2 cups white sugar
1 1/2 brown suger
4 eggs
1 tsp vanilla
6 cups oats (the Barbara Bush kind
)
1 1/2 cups chocolate chips
2 1/2 tsp baking soda
